Pineapple Cucumber Salad

While I was left with 1/2 the pineapple, which I brought 2 days back and a cucumber few days back, I thought to try this salad for this hot summer. In my childhood days, I remember tasting these spicy and sweet pineapples slices in the street side. These used to make slices and sprinkle some spicy powder. It tastes awesome and I am a great fan of it. Many of us might have tasted slitted cucumber with spicy powder sprinkled on it. I thought of making this, which I had tasted as two different snack. Just we need cut the cucumber and pineapple and then its done. Add salt when you are going to have it, else it will become watery. Kids who refuse to have fruits and vegetables will love this different combo, when served as salad.


Ingredients:

Pineapple - 2 cups (cut to small pieces)
Cucumber - 1 (cut to small pieces)
Cilantro/Corriander leaves - few sprigs (chopped)
Chilli powder - 1/2 tsp
Salt - to taste

Method:

1) Place all the ingredients in a bowl.



2) Give a gentle toss and serve it immediately.



Sweet and spicy salad is ready in minutes.

Cucumber Tomato Salad

Summer is heading to start here. Making kids to have lots of water is a tedious work. Also kids nowadays drink lot of refrigerated drinks, with lots of preservatives and chemicals. So we need to make them have lots of fruits, watery vegetables in the form of salads and shakes. If I make slices of cucumber and give her, she says is just plain and no taste in it. When I made her this salad, she loved it and enjoyed a lot. Also asked me to make the next day even.



Cucumber is a very good watery vegetable, that can be had uncooked. Especially in hot days, having cucumber will make us feel chilled, as it reduces body heat. Also by adding tomatoes will be very colorful and healthy too. This salad is very simple, just chop all of them and just toss them and its ready to serve. Within a minute we can make this healthy and colorful salad.



Ingredients:

Cucumber - 1 big or 2 small
Tomato - 2
Onion - 1 medium
Cilantro/Corriander leaves - few sprigs
Pepper powder - 2 tsp
Salt - to taste

Method:

Finely chop the onions, cucumber and tomato. Mix them and add pepper, salt and cilantro. Just toss them together and serve immediately.



Serve it immediately once it is ready, else it will become watery as we are adding salt to it.
