Bhindi/Okra/Lady's Finger Masala

Bhindi/Lady's finger/Okra, my daughters favorite veggie. She loves eating it a lot. Whenever we do go to Indian store, she will just search for her favorite veggie in vegetable aisle. So I usually use okra very often in cooking.

This okra/bhindi masala will be very tasty and little bit spicy too. It makes a great combination with sambar rice and also with curd rice.

Bhindi/okra/lady's finger - 250g (cut to 1 inch length)
Onion - 1 (finely chopped)
Green chilli - 2 or 3 (slitted)
Tomato - 2
Chilli powder - 1 tsp
Dhania/Corriander powder - 2 tsp
Turmeric powder - 1/2 tsp
Hing/Asafoetida - 1/4 tsp
Mustard - 1/2 tsp
Urad dal - 1 tsp
Cumin seeds - 1/2 tsp
Garlic - 3 or 4 cloves
Curry leaves - 1 sprig
Salt - to taste
Oil - 2 tbsp + 2 tbsp

Make tomato puree, by just blending the two tomatoes.

1) Heat a pan. Add 2 tbsp of oil. Fry the okra for about 5 mins, utnil its half done. Keep it aside.

2) Now heat a pan, add the other 2 tbsp oil. Add mustard seeds, cumin seeds, cumin seeds, hing/asafoetida and curry leaves. Also add the finely chopped onion.

3) Saute the onion, until it becomes translucent. Now add the green chillies and puree to it.

4) Mix it well and add chilli powder, turmeric powder, turmeric powder and salt.

5) Saute it for a minute and add the fried lady's finger/okras.

6) Mix it well and let it cook for about 3 to 5 mins.

7) Remove from flame when the okras are well cooked and almost dry.

Spicy lady's finger masala is ready now.
